Recipe: Chilli tofu with courgette and basmati rice
Here is one of my favourite vegan recipes for a healthy lunch, which combines the right balance of protein, carbs and vegetables.
Heat the virgin olive oil in a pan and stir-fry the courgette for a few minutes.
Pan fry the tofu in another pan adding salt, pepper, paprika and chilli flakes.
Serve the basmati rice onto the plate and top with the tofu and courgette.
Ingredients:
- 100 grams basmati rice (raw)
- 200 grams tofu (in cubes)
- Half a courgette (diced)
- 1 tbsp olive oil
- Salt, black pepper, paprika and chilli flakes
