Courgetti with pesto and balsamic tomatoes
This is an easy to prepare dish! It is great to serve on its own, or as a side with grilled chicken or salmon. Great for vegetarians too.
Ingredients
- Cherry tomatoes 8, four halved and four whole
- Olive oil
- Garlic 1/2 clove, crushed
- Balsamic vinegar 1 tbsp
- Courgette 1 medium, spiralised or very thinly shredded into noodles
- Pesto 2 tbsp (fresh if available)
- Pine nuts 1 tbsp, toasted (if available)
- Salt and pepper for seasoning as required
How to prepare:
- Toss the tomatoes with 1 tsp oil, garlic, balsamic vinegar and some seasoning.
- Tip this into a frying pan and cook for 5 minutes until the tomatoes start to burst and are coated in the balsamic vinegar.
- Pour a kettle of hot water over the courgette spaghetti and blanch for 30 seconds. Drain really well, toss with the pesto and season well.
- Stir, coating the noodles, then add the tomatoes and pine nuts to serve on your courgetti.
- Add chicken or salmon to your own taste.
